Copy Cat Jiffy Cornbread Mix, Sour Cream Substitute and Corn Casserole

Today for dinner I’m gonna make something I’ve never made before and thats a Corn Casserole. I mistakenly opened a can of cream corn the other day so to use it I’m gonna make a casserole. The only thing is that I didn’t have any Jiffy Cornbread Mix nor did I want to use anything that had any artificial ingredients in it, so I remembered I had written down a Copy cat recipe. I don’t remember where I got it and I apologize to anyone if I’m using your recipe but here it is:

Copycat Jiffy Cornbread Mix-

***This recipe will make a pan of cornbread-Equivalent to 2 boxes of Jiffy Cornbread mix. **To make 1 box of Jiffy Corn Bread mix-halve this recipe

4 cups flour
4 cups cornmeal
2 cups nonfat dry milk
3/4 cup sugar
1/4 cup baking powder
1 teaspoon salt

Combine all until well blended.

USE FOR CORN BREAD:
Combine
1/4 cup melted butter or margarine in 8″ square pan while preheating oven to 425ºF
1 egg, beaten
1 cup water or milk
2 1/3 cup Mix

Stir just to blend. Pour into pan greased 8″ round pan and bake about 18-20.

Jiffy Corn Casserole

1 can whole kernel corn (juice, too)
1 can cream style corn
1 c. sour cream
1/4 c. sugar
2 eggs, beaten
1/2 c. melted butter
1 (8 oz.) box Jiffy corn muffin mix

Mix together adding muffin mix last. Bake in large casserole or 9×13 pan at 350 degrees 50-60 minutes until set. Let stand 5 minutes before serving.

Sour Cream Substitute

2/3 cup dry milk
1-4 tsps of water-(original recipe called for 3/4th cup but that ended up being way too much)
1 teaspoon vinegar
Beat together thoroughly and refrigerate.

***REVIEW OF ALL THREE RECIPES:

Wow, the Copycat Jiffy Mix came out excellent. I made the Sour Cream substitute and at first noticed how watery it was and after refrigerating it, it never thickened up. So I did it again using just a small amount of water, a few teaspoons and it turned into Sour Cream, so I used that to make the Corn Casserole. I have never been a fan of Cream Corn but I didn’t want to be wasteful and let me tell you, this recipe was VERY GOOD. I really enjoyed it. I got seconds of it. Its good as a side dish or as a main dish. The picture above is the casserole coming out of the oven. I will make and use all three recipes again!

  1. just found your post from google – I’m looking for a whole foods recipe for a jiffy cornbread mix. I don’t want to use the box, I just want to use the dry stuff I have at home already. So if I halve the dry ingredients you listed, I could use that a sub for a jiffy mix in any recipe??
